Maria’s Quiche from Café Del Libros
Maria & Julia owned and ran Café del Libros in Oakville for many years when our children were quite young. My family spent many happy Sunday Brunches there, followed by lounging in the adjoining book store when we were too full to move. Every item was always perfect, including these quiches. Thank you for sharing this recipe with us Maria!
Measure 1 egg/person approximately; break it into a large measuring cup
Add equal amounts of cream (as the egg) – 35% is best as it then will require less cooking. You may use 18% and cook for longer. Homo 3.5% and skim do not work.
Add ½ the amount of milk as the cream
Precook the pie shell and allow it to cool slightly
On the dry shell, cover the bottom with grated cheese – old cheddar is what we prefer
Combinations are endless, however here are some ideas:
- Broccoli & Ham
- Bacon & Onions
- Zucchini & Eggplant
- Ground Beef, Onion & Broccoli
Sauté the onions, zucchini, and eggplant, lightly steam the broccoli and asparagus, and fully cook the meat before using.
Place your choice of items on the cheese and spread around evenly. Place a tray under the pie shells as they can spill easily when moving, and overflow during baking.
Cover with the egg mixture on top, and place them in the oven at 300 F for ½ hour, then 325 F or 350 F for another 25-30 minutes.
Add a salad on the side, and you’re good to go.
They freeze well, so make up a few extras, for your own lazy Sunday Brunch, or a quick & easy dinner.
