ME's Brown Rice & Almond Salad 

A yummy change from potato salad on a picnic or for a summer side dish.

1 cup brown rice (+ 2 cups water) Cook and allow to cool. Add some wild rice for variety.
½ cup sliced almonds
1 can mandarin oranges (juice drained out)
1 cup sliced celery
2 TBsp. green onion
Mix all of the above ingredients together.

Sauce:
¼ cup sesame oil
¼ cup raw apple cider vinegar
2 TBsp Tamari soy sauce
1 clove garlic minced

Mix together the sauce ingredients, then pour over and toss with top ingredients. Serve at room temperature or slightly cool.
