Chicken & Vegetable Soup – The Sweet Cooked Onion and Bone Broth Version
2-3 Onions – chopped well
3-5 Cloves Garlic - chopped well
2-3 Carrots - Diced small
2-3 Celery Stalks - chopped well
1 Zucchini - diced small
2 potatoes or sweet potatoes - diced small
Parsnips, Celeriac, Cabbage or other veggies if you like them
Butter or Olive Oil
Chicken Bone broth - With some meat still in it.
Optional – Add any spices of your choice for ex. Basil, Parsley, Italian Seasoning, Herbs de Provence, Cumin, Paprika, or Cayenne.
Vegeta (non-MSG one) or organic Bouillons
Sauté the onions in butter or olive oil in the bottom of the soup pot until they begin to run out of moisture and then add more water so they are fairly wet, and sauté more, then add more water as the water cooks off, and keep doing this for a few times. This brings out the sweetness in the onions and adds a lot to the flavour of the soup.
Then add all of the chopped up veggies (except for the cabbage – this can go in when you add the water/broth)
Sauté the veggies with the onions, salt and pepper until they start to change and get aromatic. Then add the bone broth and bring to a boil. Reduce to a summer until cooked. Add the chicken meat at some point toward the end of cooking as it has already been well cooked with the bones. Add spices of your choice.
