Sweet Cooked Onion, Vegetable & Bean Soup
This recipe was given to me by Martina Vuksinic; a wonderful friend, who use to have a busy restaurant in downtown Montreal, and who now teaches the children at the Halton Wardorf School how to cook and feed themselves healthy foods, as well as how to grow them! This is just one of the recipes that she taught my daughter. After eating this soup, she came home from school and got to work right away, showing me the magic within the onions. This is an approximation of Martina's recipe, through my daughter, and varies every time we make it. The one thing that doesn’t vary is that it is always sweet & yummy!
- 2 (or more) onions, chopped well
- 1-2 Tablespoons olive oil & or butter
- 2-4 cloves garlic, minced
- 2-3 carrots, chopped finely
- 2-3 celery stocks
- 1-2 parsnips
- 1-3 potatoes
- Optional – zucchini, cabbage, any other veggies of your liking
- Optional - 1 can beans – organic black-eyed peas, adzuki, pinto, kidney beans, or any other that you like, cooked and rinsed well.
- Enough pure water to cover the ingredients well and a few inches more
- Sea salt, pepper, basil, favourite spices
- 1 Tablespoon Apple cider vinegar
- Optional -1 Tablespoon Apple cider vinegar, GoBio Organic chicken vegetable Bouillon cube(s), or Vegeta, no MSG –contains cornstarch & color
Sauté the onions in oil/butter until soft and smelling yummy. Before they get too dry, add a splash/few tablespoons of water and let them sauté again. Repeat this process several times. This is what increases the onions’ flavour and makes them sweet. Once the onions are sweet enough, add the rest of the chopped veggies and sauté them with the onions and some water until they begin to cook and soften too. Repeat the water addition with this stage as well. Then add the rest of the water, season with salt, pepper and any spices you like. After 10 minutes or so, add a can of rinsed beans and allow everything to simmer gently for about 20-30 minutes. You may want to use a hand blender or masher to mix part of the soup, to increase its creaminess. You may like to add more garlic, salt and pepper, as well as other options listed above, or your own favorites.
