Spelt Bread & Honey Butter

This bread, fresh from the oven, when topped with honey butter, is absolutely irresistible!

1¾ cups hot water
2½ Tbsp honey
1¼ Tbsp yeast
½ cup millet flour
3-6 cups spelt flour

In a large measuring cup, mix honey with hot water. Sprinkle over with yeast and let stand until yeast creates a firm “sponge” on the surface, about 15 minutes. In a large bowl, measure millet flour and half of the spelt flour. Make a well in the center. Pour the prepared yeast into the well. Gently draw flour into the yeast mixture with hands or spoon. Add flour gradually until the dough is soft and elastic without being sticky. (Break off a small piece for your child to work with.) Meanwhile lightly oil bread pans. Knead dough for 20 minutes. Shape dough into portions that are less than half of the height of the bread pan, but almost as long. Let the dough rise undisturbed for 30 minutes. Preheat oven to 350*F. Bake on middle rack for about 20 minutes or until top sounds hollow when gently tapped with finger. Turn out onto cooling racks. Makes approximately 2 loaves.

Honey butter is simply made by creaming together a tablespoon of honey with 3 tablespoons of buter.
